The only thing I researched was the mobo-it looks awesome!

I'm wondering if I need thermal paste (or thermal tape, and don't you need a bracket for an ssd? They have a cable to go from ssd to usb3, anyone know what this is for?

    The stock cooler included with the i7-2600 will have thermal tape on it already. If you plan on using something else, like if you're going to overclock, then you'll need some paste.

    The pricier SSD's will come with a 2.5 to 3.5 inch bracket, however the one you picked does not. You have to buy one separately. There may be one included in the case however. The cable you referenced is a sata to USB3 adapter, used if you want to use the drive externally, or simply wish to use an internal USB3.0 port to connect the drive. If you're using the ssd as your boot drive, just buy a sata cable, since one does not come with the ssd drive.
