I can vaguely remember the Merry Mobiles, like the early 1960's. Competing with boys riding 3 wheel bicycles having cooler boxes full of treats and a row of jangle bells that they had to flip with their fingers to ring. Those were all replaced with the Mr Softee trucks you mention. That actually did soft-serve on the fly.
Now they are all replaced by the pre-packaged stuff sold by hoodlums driving miniature bread truck like vehicles with blaring nursery rhyme music. I don't know how those guys can stand listening to that same jingle all day long.

I think this practice has all but disappeared now.
Although there is a guy that drives down the street in a big van once a year with a knife sharpening service.
